**The Penicillin**
* 2oz (60ml) blended Scotch whisky
* 3/4oz (22.5ml) fresh lemon juice
* 3/8oz (11ml) ginger syrup (recipe below)
* 3/8oz (11ml) honey syrup (recipe below)
* Splash of Islay Scotch whisky
* Candied ginger
*Directions*
* Add blended Scotch, lemon juice, and both syrups to a shaker tin with ice
* Shake for 15 seconds
* Double strain into a rocks glass with ice
* Float Islay Scotch on top
* Garnish with candied ginger

* 20oz (570g) fresh ginger to yield 1/2 cup (120ml) ginger juice
* 1/2 cup (100g) superfine sugar
*Directions*
* Peel fresh ginger with a spoon or vegetable peeler
* Pulse in food processor or blender until a soft pulp
* Add ginger into a nut milk bag or cheese cloth and squeeze out juice
* Combine 1/2 cup of the ginger juice with the sugar
* Shake to combine and store in the refrigerator for up to 1 month (add a touch of vodka to help with preservation)

Ellis_Dee_025: I’ve been obsessed and experimenting lately with The King’s Ginger liqueur (41%), it’s sweet ginger and a hint of lemon. It’s totally amazing in lemonade, unfiltered apple juice, cream soda or just on the rocks. I’ve mixed it with lemoncello, vodka, and scotch (separately, not one drink, haha) and it’s just amazingly good stuff!

cronnyberg: This is my favourite cocktail. I saw a Jamie Oliver video about it a couple of years ago, and I make it frequently now, and have made it for friends when we’ve had parties.
One slight alternative to this recipe is to simply reduce the ginger juice with some honey in a pan, rather than faffing about making two separate sugary components. Works just as well, and the syrup keeps in the fridge for ages, so can be made in bulk.
Gingerhoney syrup + lemon juice + whiskey + ice + a splash of the good stuff can be thrown together in seconds.
