It’s a Dutch baby! They’re occasionally called “German pancakes,” but since the recipe (I believe) originated in the US, both names are pretty misleading.
Looks good. Haven’t made a Dutch baby in years. But, seriously? Spread those apples out evenly before you bake it.

Smacktivate: Am german, never heard or seen this. My mother used to make apple pancakes but its just a normal pancakes with apple slices in them…
Also don’t know anybody who makes pancakes in the oven. Our pancakes aren’t fluffy like in the US. They’re kind of like a mix between a Crepe and a American Pancake.
This looks more like a dutch baby. So maybe it’s from north germany/netherlands???

**GERMAN APPLE PANCAKE**
Serves 2 to 4
Prep Time: 8 minutes
Total Time: 28 Minutes
**Ingredients:**
* 3 large eggs, room temperature
* ¾ cup whole milk, room temperature
* ¾ cup all-purpose flour
* 3 tablespoons granulated sugar
* 4 tablespoons butter, divided
* ¾ teaspoon cinnamon
* 1 large Granny Smith apple, peeled, sliced ¼-inch thick
* 1 tablespoon brown sugar
* Confectioners’ sugar
**Directions:**
1. Preheat the oven to 425 degrees Fahrenheit (218 degrees Celsius).
1. In a medium bowl, whisk together the eggs, milk, flour and sugar until smooth.
1. In a 10-inch cast iron skillet over medium heat, melt the butter. Add the apple slices and sprinkle with the brown sugar and cinnamon. Cook for about 5 minutes, frequently tossing, until the apples are coated and have softened. Transfer to a dish.
1. Wipe the skillet with a paper towel and place in the preheated oven for about 8 to 10 minutes, until very hot.
1. Add the remaining butter to the skillet, swirling to coat the bottom and sides. Add the cooked apples to the center of the pan and pour the batter on top.
1. Bake for 18 to 20 minutes, until the pancake has puffed and the edges are golden brown. The center should be set but custardy.
1. Sprinkle with the confectioners’ sugar and serve immediately.

You can actually make it rise better if you don’t whip the eggs Into the batter , but Wait until the batter is already nixed completely, then adding the eggs and not really whipping them up completely, definitely break the yolks and mix well, but don’t fully scramble the egg mix.
Also, cook the bottom, then flip like an onelette and finish baking.

IsaacAsimovSideburns: Since I have 2 cast iron skillets, I would start heating one in the oven while I was mixing the eggs, flour etc., and cook the apples in the second skillet. Save some time.
just_a_manatee: Am also part german & have never seen this. My grandma (on the german side) would make potato pancakes that you would put sugar & cinnamon on & they tasted delicious. She also made apple pancakes. Her process was to decore the apples, slice perpendicular to the hole, pour what I assume was homemade pancake batter into a skillet (but just enough to make personal sized pancakes), then after a bit she would place an apple “circle” into the frying batter. Flip it & then let it cool on a piece of paper. Dip it in apple sauce once cool & they tasted amazing. She died last year but I still have her recipe book which I’m slowly cataloguing. She had a lot of good recipes, including the pancakes. I can’t wait to post a link on here.
