icingonthesteak: **Chicken salads are a great meal time option during the warmer months. They are really quick and easy to make and bring a wonderful taste of summer. This is a simple, popular salad that is great for lunch or dinner. It is full of favourites such as egg, lettuce, tomato, cucumber and avocado. It is further enhanced through the addition of Cajun spiced chicken to provide a more substantial meal. A simple, tasty salad dressing adds to the flavour.**

**Ingredients:**
*Cajun Chicken*
• 3 large Chicken Fillets use breast fillets cut into bite size pieces
• 1 tbsp Cajun Seasoning
• 1 tsp Olive Oil
*Cobb Salad*
• 3 Eggs hardboiled & sliced
• 2 Baby Cos Lettuce
• 1/2 Red Onion thinly sliced
• 10-15 Cherry Tomatoes halved – I also like to use mini Roma tomatoes
• 1 small Cucumber chopped / cubed
• 2 Avocados cubed
*Salad Dressing*
• 4 tbsp Whole-Egg Mayonnaise
• 1 tsp Tobasco Sauce
• 2 tsp Lemon Juice
• 1/4 tsp Ground Parsley
• 2 tbsp Hot Water
• Pepper to season
• Salt to season
**Instructions:**
*Cajun Chicken*
1. Place chicken, olive oil & cajun seasoning in a large bowl and stir to mix through. Make sure to coat the chicken fully with the cajun seasoning. Allow to marinate for 30 minutes.
2. Add chicken to a frying pan over medium high heat and cook until browned and cooked through. Remove from pan and add to salad. See instructions below.
*Cobb Salad*
1. In a large salad bowl, line the bottom of the bowl with baby cos lettuce.
2. Add sliced egg, red onion, cherry tomatoes, cucumber & avocado. Keep each ingredient together for presentation or mix all together if that is your preference.
3. Add cooked cajun chicken.
4. Drizzle with salad dressing (see instructions below)
*Salad Dressing*
1. In a small jar or jug, add mayonnaise, tabasco sauce, lemon juice, parsley, hot water, salt & pepper. Shake or stir to mix through.
2. Drizzle over salad when ready to serve, or alternately let each person drizzle over their serving, if required.
