[They actually grilled the lettuce]
Here’s how you make it:
1. Make a regular mayo with egg, vinegar, Dijon and oil. Mix it together and add parmesan cheese. Mix again and season with salt.
2. Season the meat with salt and grill on both sides so you get a nice surface. Shove in the oven at 120C until inner temp of 54C. Let it rest before slicing.
3. Drizzle olive oil on the lettuce and grill in dry pan or on the grill. Season with salt.
4. Grill sourdough bread. Drizzle some oil and salt on the bread before grilling.
