**Ingredients** (for 4 portions)
* 4 large thin veal cutlets, each 150g/5oz
* 2 eggs
* about 10 tablespoons breadcrumbs
* 1 tablespoon flour
* freshly ground pepper
* salt
* 4 tablespoons concentrated butter
* 1 organic lemon
* 1 stalk of parsley
**Instructions**
1) Beat the cutlets flat between a cut-up freezer bag (or between transparent film). This is possible to do using a pan, a meat tenderizer or the ball of the thumb.
2) Place the beaten eggs, breadcrumbs and flour, mixed with salt and pepper, each separately on a plate. Turn the cutlets on both sides firstly in the flour, then in the egg; finally in the breadcrumbs and tap them off.
3) Fry the cutlets on both sides in concentrated butter that has been heated to a sufficiently hot temperature, until they are golden brown.
4) Leave the cutlets to drip dry on kitchen towels. Rinse lemon under hot water, rub dry and cut it into eighths. Wash the parsley, shake it dry and pluck off the leaves. Serve cutlets with lemon and parsley.

kidajske: Considering the percentage of that flour that actually goes on the meat, you need to add a lot more salt or alternatively season both the eggs and the breadcrumbs as well.
