I woke up this morning feeling like I needed to cook. It was gray and gloomy and felt like the perfect morning to try out a new spicy breakfast recipe. This spicy breakfast consists of harissa fried potatoes (which are basically regular fried potatoes except I added a bit of water to harissa paste and stirred it in toward the end of the recipe and allowed the potatoes to soak up all that spicy, harissa goodness) and two poached eggs, which you can replace with your favorite type of egg (soft-boiled, fried, or even scrambled).
I also added a red bell pepper for some crunch and scallions for their aromatic quality to the harissa fried potatoes. Finally, to serve, we sprinkled a bit of harissa powder on top of the poached eggs, but you can really sprinkle with crushed red pepper or paprika if you wish!

#Ingredients for Spicy Breakfast Recipe: Harissa Fried Potatoes with Eggs
**HARISSA FRIED POTATOES**
6 thick slices of bacon
2 large Yukon gold potatoes
1 red bell pepper
3 scallions
Salt and pepper to taste
2 tablespoons harissa paste
½ teaspoon cayenne powder (more or less to taste)
**POACHED EGGS**
2 large eggs
2 teaspoons distilled white vinegar
Salt and pepper to taste
Harissa powder (or cayenne powder, paprika, or crushed red pepper) to taste, optional, for serving
#Method
Prepare Ingredients: Scrub the potatoes and small-dice. Roughly chop the bacon (Should be about ½” pieces). Remove the seeds from the bell pepper and dice the pepper. Rinse the scallions and mince. In a small bowl, combine the harissa paste with 1 tablespoon water and whisk until smooth.
Cook the Bacon: Transfer the bacon to a large skillet. Turn the heat to medium and cook, stirring regularly, until all the fat has rendered and the bacon is crispy, about 8-10 minutes. Use a slotted spoon to remove the bacon and transfer to a bowl, reserving the fat in the pan.
Prepare the Harissa Fried Potatoes: Turn the heat on the bacon grease to medium high. Once very hot, add the potatoes and cook, stirring regularly for 15 minutes until beginning to brown all over and almost completely cooked through. Season with salt and pepper. Reduce the heat to medium and add the bell pepper and scallions and continue cooking for another 10-12 minutes until the potatoes are fork-tender and the red bell pepper has softened. Add the bacon, harissa and the cayenne powder and reduce heat to low. Toss to coat and keep warm over very low heat as you prepare the poached eggs.
Prepare the Poached Eggs: Bring a small saucepan of water to barely a low boil (you should see just a few bubbles at the bottom of the pot). Add the vinegar and stir. Crack one cold egg into a ramekin. Use the back of your wooden spoon to stir the water in the pot to create a whirlpool in the center. Quickly pour the egg into the whirlpool and immediately cover. Cook for precisely 5 minutes. Watch the pot carefully to ensure the water doesn’t begin boiling. Remove the egg with a slotted spoon and do the same process for the second egg.
To Serve: Divide the harissa fried potatoes between bowls and top with a poached egg. Sprinkle the egg with salt and pepper and sprinkle with harissa powder, if desired. Enjoy!
