macsyme: I’d go with parchement paper instead of foil. I’d worry about foil getting stuck to the toffee and ending up on my fillings.

mastelsa: An easier and more fool-proof way to do this would be to just cook the candy to the appropriate temperature to begin with (~285 F for hard crack), add the pretzels, then spread it out on the sheet. Making candy based on time instead of temperature is just asking for trouble.
