Boiling hot water 70ml
CMC 3gm
Glucose syrup ½ tsp
Corn flour 6gm
Icing sugar 7gm
Meringue powder ¼ tsp
Glycerin ½ tsp
**Directions**
Add CMC to the hot boiling water { it’s going to be very lumpy } and mix thoroughly.
Add glucose syrup and mix.
Then add the dry ingredients and mix them in.
Lastly add the glycerin and continue to mix until no lump can be felt.
The mixture will be thick (almost jelly like in some instances).
Tip: If it feels too thick add hot water one tablespoon at a time and if it’s too light add cornflour a tablespoon at a time.
Add your color of choice and mix it in.
Lightly dust the lace mat with corn flour.
using a spatula, apply the sugar lace over the mat and remove any excess.
Place the mat in an oven at 110° for 10 minutes { or until the sugar lace feels firm to the touch } and keep the oven door slightly open to dry the sugar lace.
With practice you will know to remove the lace mat at the correct time. Too early and the lace will be stretchy and loose and if over baked, it will become brittle. Allow the lace to cool and spread another second layer of sugar lace. Return it to the oven to dry. Once the lace is firm, remove it from the oven and allow it to cool.
Tip: If the lace mat feels stiff, place a slightly damp cloth over the mat for 30 seconds to unstiffen the sugar lace.
Fold one corner of the lace mat and slowly peel the sugar lace from the mat.
