steevo15: **Ingredients**
– 10 roma tomatoes
– 1 medium sized red onion
– 3 jalapenos
– 3 cloves garlic
– 1 can black beans
– 1 can sweet corn
– 3 Tbsp finely minced fresh cilantro (or more to taste)
– Juice of one lime (or more to taste)
– Salt to taste
**Directions**
1. Coat jalepenos in vegetable oil and place on baking sheet. Put under broiler in oven, turning over once skin starts to blister and blacken, remove from broiler once both sides are done and seal in a ziploc bag.
2. Finely dice tomatoes and put in a large bowl. Drain excess juice
3. Finely dice onion and add to bowl
4. Remove jalapenos from ziploc and peel off skin. It should come off easily using your fingers. Cut off stems, optionally remove seeds and ribs for less spicy salsa, I left one with seeds and ribs and and removed for the other two. Very finely mince (I used a food processor) and add to bowl.
5. Use a garlic press or very finely mince garlic and add to bowl
6. Rinse and drain corn and black beans, add to bowl
7. Very finely mince about 3 Tbsp (or more to taste) of fresh cilantro, add to bowl
8. Add the juice of one lime (or more to taste)
9. Salt to taste
This makes a butt ton of salsa so adjust recipe as needed. I like all the ingredients in my salsa very very finely chopped, if you want a chunkier salsa just chop the onions and tomatoes less. I would still recommend finely mincing the jalapeno though to get that roasty flavor throughout the salsa. Also I used three pretty large jalapenos from the store so you might need more if you have small ones. If the salsa tastes “flat” add more salt.

looks like solid salsa! i’d eat the hell out of it. would also be fun to sub in some ripe mango chunks for the sweet corn.
