**Fruit Popsicles**

**Ingredients**
* 1½ Cups Watermelon , cut into small pieces (about 8 ounces)
* 2 Tablespoons Lime juice (juice of 1 lime)
* ⅔ Cup Simple Syrup, divided (equal parts sugar and water)
* 1½ Cups Honeydew Melon, cut into small pieces (about 8 ounces)
* 2 Tablespoons Lemon Juice (juice of 1 small lemon)
* 1½ Cups Mango, cut into small pieces (about 10 ounces)
* ¼ Cup Orange Juice (juice of 1 small orange)
**Directions**
1. Blend the watermelon, lime juice, and 1 – 2 tablespoons of simple syrup until smooth. Fill 6 popsicle molds (or small cups set on a tray) about ⅓ of the way full. Freeze the popsicles until they’re partially frozen (about 30 – 45 minutes).
1. Rinse out the blender, and blend together the mango, orange juice, and 1 – 2 tablespoons of simple syrup until smooth. Pour the mango mixture over the partially-frozen watermelon layer until each popsicle mold is about ⅔ full. Freeze the popsicles until they’re partially frozen (about 30 – 45 minutes).
1. Rinse out the blender again, and blend together the honeydew melon, lemon juice, and 1 – 2 tablespoons of simple syrup until smooth. Pour the honeydew mixture on top of the mango layer until the popsicle molds are full, then insert a popsicle stick into each mold. Freeze the popsicles until they’re completely firm (about 1 – 3 hours).
1. Remove the popsicles from the popsicle molds and serve.
**Chef Tips**
* If you don’t have popsicle molds, you can use 3-ounce paper or plastic cups. To remove the frozen popsicles from the cups, use a pair of scissors to cut the cup away from the popsicle.
* If you have trouble removing the popsicles from the molds, run a little hot water over the outside of the molds to loosen the popsicles.

Liarize: I like to add a pinch of salt to my fruit Popsicles. It helps accentuate the the fruits’ individual flavour.

Cosmic_Hitchhiker: A few small tweaks and this is also a great way to trick your children into eating vegetables (instead of honeydew, make the last layer spinach pineapple, you can’t taste the spinach. Add a little beetroot to the red layer. Add sweet potato or squash to the orange layer. Or jicima to any layer.)
