These are great right out the oven or reheat for an easy and quick breakfast on the go.

INGREDIENTS
* 2 Tbsp. butter (divided)
* 8 oz. breakfast sausage
* 8 eggs
* 3/4 tsp. salt
* 2 Tbsp. milk
* 8 oz. gouda cheese-shredded
* black pepper
INSTRUCTIONS:
1. Heat skillet or sautee pan over medium heat.
2. Crumble sausage into pan and let brown on one side.
3. Stir sausage and continue to cook until no longer pink.
4. Remove from heat and set aside.
5. In a large bowl, beat eggs, milk, and salt until well combined.
6. Heat non-stick pan over medium-low heat. Add 1 Tbsp. butter until melted.
7. Add eggs and stir constantly. Cook eggs until they have formed small curds, but still fairly wet. (You don’t want to cook them completely, or they’ll turn rubbery when you bake them in the pinwheels.)
8. Remove from heat immediately and set aside.
9. Preheat oven to 425F.
10. I use a store-bought pizza dough from my deli, but feel free to make your own from scratch.
11. Divide pizza dough in half.
12. Work with one half at a time, cover the other half with plastic wrap and set aside.
13. Flour your work surface and rolling pin. Roll and stretch dough into a 10″x15″ rectangle, which will be about 1/8″ thick.
14. Melt 1 Tbsp. butter and brush a very thin layer over dough.
15. Spread half of the scrambled eggs over the dough, leaving an inch border around the edges.
16. Then sprinkle on half of the sausage.
17. Next, sprinkle on 3/4 cup shredded gouda.
18. Crack some black pepper over the top.
19. Start from the bottom and fold the dough border on top of the filling.
20. Continue to roll until you reach the top border.
21. Brush a little butter on the exposed dough (which will act as a glue) and fold it over.
22. Pinch seam lightly to make sure it sticks together.
23. Cut off any scrap from the edges. Slice the pinwheel into 8 equal pieces.
24. Place on a parchment lined baking sheet and press down slightly.
25. Sprinkle 1/4 cup of gouda evenly over each pinwheel.
26. Repeat process with other half of dough.
27. Bake for 10-12 minutes, rotating the pan half way through.
peacockdreamz: My only worry would be if the dough gets cooked in the middle. runny eggs + cheese + greasy sausage = lots of water that would inhibit the dough from cooking.
