**Tomato Basil Soup**
Serves 4
Prep Time: 10 Minutes
Total Time: 45 Minutes
**Ingredients**
* 1 Tbsp. butter
* 1 Tbsp. olive oil
* 1 medium onion, small dice
* 1 tsp. salt
* 1 pinch chili flakes
* 2 cloves garlic, minced
* 1 (28 oz) can whole peeled San Marzano tomatoes
* 2 cups chicken or vegetable stock
* ¼ tsp. black pepper
* ½ tsp. balsamic vinegar
* ½ cup heavy cream
* ¼ cup basil, chopped
**Preparation**
1. In a medium saucepan over medium-low heat, combine butter and oil. Once butter has melted, add onions, season with salt, and cook until onions have fully softened.
1. Add chili flakes and garlic and cook another 5 minutes.
1. Increase heat to medium, add tomatoes with their juices and cook about 10 minutes, crushing tomatoes with the back of the spoon.
1. Add the vegetable or chicken stock, black pepper, and balsamic vinegar, and continue to cook until tomatoes completely fall apart.
1. Remove from heat and use an immersion blender to puree the soup.
1. Return to low heat and slowly stir in the heavy cream. Adjust seasoning as needed.
1. Stir in chopped basil.
1. Serve garnished with croutons and fresh basil.
PsychoticMessiah: My wife makes something similar and it’s delicious. Now go get some French or Italian bread (preferably with sesame seeds) and some fresh mozzarella. Preheat broiler. Slice the bread short ways and cover with thin slices of the mozz. Place on a foil lined cookie sheet and broil until the cheese gets a little bubbly and the bread starts to brown. Drop that on top of your soup or place in bowl first. Enjoy.
