tjay2601: **Serves:** 2
**Time:** 20 minutes
**Ingredients:**
250g diced chicken breast
1 tbsp flour
Juice of 1 lemon
1 tbsp sweet chilli dipping sauce
2 tsp soy sauce
2 tsp cornflour
Thumb sized piece of ginger
1 large red chilli
2 tbsp honey
Half a bunch of spring onions
2 noodle nests
**Method:**
To prepare the chicken, season with salt and pepper and coat in the flour, before setting aside.
To make the sauce, mix the lemon juice, sweet chilli dipping sauce, soy sauce, cornflour and 100ml of water in a bowl.
Finely slice the chilli and ginger.
Fry the chicken until cooked all the way through and remove from the pan.
Fry the ginger and chilli for a minute or two until fragrant.
Add the honey for a further minute over a medium heat.
Add the sauce and bring to the boil. If the sauce becomes too thick here, add some water as necessary and that should do the trick.
Return the chicken to the pan and coat thoroughly in the sauce, cooking for a further two minutes.
Finely slice the spring onions.
Serve the honey chilli chicken on noodles and sprinkle the spring onions over the top.
**Endnote:**
Hope you guys enjoy what was my first recipe at uni! Over the last year I’ve perfected it and it’s now a family favourite! Even if only one if you see this, I hope you give it a go, as it’s so flavoursome!
Enjoy!
