These little chicken pieces will be woefully over cooked almost an hour in at 400.
I like “one dish” recipes as much as the next guy, but there’s no shame in cooking separately and combining after. Especially when cooking temps/ times are so different.

GodDammitKevinB: I don’t understand cooking bacon on the stove top. You can cook full slices (without dicing) in the oven and when they come out, crumbling is much easier than cutting raw bacon.

**Loaded Chicken and Potatoes**
Serves 6
Prep Time: 10 minutes
Total Time: 1 hour
**Ingredients:**
* 1 lb. boneless chicken breast, cubed 1”
* 8 medium red potatoes, diced ½”
* 1/4 Cup olive oil
* 2 tsp. kosher salt
* 1-½ tsp. ground black pepper
* 1 tbs. paprika
* 2 tbs. garlic powder
* 3 tbs. hot sauce (chalula)
Topping
* 2 Cup Cheddar cheese blend, shredded
* ½ lb bacon, diced
* ½ Cup green onion, chopped
Optional Garnish
* sour cream
* tomatoes, diced
**Instructions:**
1. Preheat oven to 400 degrees.
1. In a large bowl, combine the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the potatoes and chicken and stir to coat evenly. Place the potatoes and chicken in a 9×13” baking dish and bake for 45 – 55 minutes, until cooked through and browned and crispy on the outside.
1. While the potatoes are baking, in a small saute pan fry up the diced bacon until crispy and brown. Remove from pan to a paper towel lined plate, reserving for later.
1. Once potatoes are done remove from the oven and top with the cheese, bacon and green onion. Return to the oven for an additional 5 minutes to melt the cheese.
1. Serve with diced tomatoes and a dollop of sour cream, if desired.
cmk90: Seems pretty simple to make. Will have to try it this weekend.
blacksoxing: Thinking out loud….couldn’t I cook up the bacon and then remove that. Throw the potatoes w/that sauce in a bit of the bacon fat and hit it w/a lid, stirring every few mins to prevent it from charring. In another pan I could wait about 10 minutes and then saute up the chicken w/the rest of the bacon. When the potatoes are near done I could transfer the chicken to that pan, hit it w/the cheese, lid it, then hit it w/the green onions & bacon.
Two pans…but fluffy fried potatoes, bacon-flavored chicken, and the same results without it looking dry.
I think that’s the real fun of this forum….nothing is ever perfect but it gives you ideas of how you could improve/compromise.

Either the chicken will be terribly overcooked, or the potatoes will be terribly undercooked, depending on the amount of time/temperature you bake them. *There is literally no way to bake these two items together for the same amount of time without one or the other being terrible.*
If you *really* want to make something like this, I would recommend a two-step process: bake the potatoes in the oven, and cook up the chicken in a pan, then mix them together at the end for serving. If you want that “baked” look, use oven-to-table dishes, and melt some cheese on top of the now-mixed ingredients in an oven for two or three minutes immediately prior to serving.
But honestly, the chicken doesn’t seem like a good fit for this, anyway. I would try steak tips.
