I was so excited this came out perfect and didn’t collapse, even at our high altitude! It is a simple dessert to make. I used Black Plums, but you can use any stone fruit.

INGREDIENTS:
eggs – 4
sugar – 1/2 cup
milk – 3/4 cup
heavy cream – 3/4 cup
butter – 1 1/2 Tbsp.-melted
vanilla – 1/2 Tbsp.
flour – 1/2 cup
salt – 1/4 tsp.
butter & sugar – (for preparing baking dish)
black plums – 3-5
powdered sugar
INSTRUCTIONS
1. Preheat oven to 350F. Prepare a baking pan or casserole dish by rubbing it with butter and coating with sugar. (I used a 9 inch round cake pan. Just make sure you use something that has sides at least a couple inches tall.)
2. Cut plums in half and remove pit. Then cut each half into 6 wedges. Arrange in a circular pattern on the bottom of the cake pan. My plums were fairly large, so I only needed 3 to cover the bottom of the pan.
3. In a large mixing bowl, beat eggs. Add sugar and whisk until combined. Stir in cream, milk, melted butter, and vanilla. Slowly whisk in flour and salt (making sure to incorporate any lumps of flour). Slowly pour custard mixture over plums. They will float to the top. I like to re-arrange any that have turned the wrong direction.
4. Bake for 40-45 minutes until the custard is set. Test for doneness by inserting a toothpick. If it comes out clean, then its ready.
It will puff up considerably in the oven, but will settle once cooled. Cool for 5 minutes, dust with powdered sugar, and serve warm.
sokrateas: I have a plum tree in the yard and every year I get lazy and just turn it all in to jam. This looks like a nice change of pace to use up some of my yield.

Johnpecan: Clafoutis are great with lots of different fruits, never tried plum. The biggest discrepancy I see in clafoutis recipes is whether to use milk or cream. I prefer the cream by far like this recipe states.
