hattroubles: If you don’t do tofu, mushroom is another great meat alternative. Using several varieties of mushrooms also adds further depth to the dish.
standardalias: I expected by now the comments would be the perfect shit storm of the anti vegan recipe people and the “spaghetti Bolognese isn’t a real dish” people spamming their hate. This is a little eerie. Looks pretty tasty though.
Ariel_Etaime: I like this idea! I love tofu (and meat) but I’ve never thought to crumble it and use it like this!
drocks27: Ingredients
* 1- 16 oz (450g) block of firm tofu
* 3 tablespoons olive oil
* 1 large onion, finely chopped
* 3 celery stalks, diced
* 2 carrots peeled and diced
* 1 teaspoon of salt
* 1/4 cup soy sauce
* 1/4 cup brown sugar, cane sugar or maple syrup
* 3 cloves garlic, finely chopped
* 2 tablespoons dried basil
* 2 tablespoons dried oregano
* 1/2 teaspoon crushed red pepper flakes
* 3 cans of 28 oz (796 ml) diced Italian tomatoes (with the juice)
* salt and pepper
Directions
1. Grind the tofu in a food processor or with a fork. Set aside.
1. In a large saucepan, heat olive oil. Add onion, celery, carrots and salt. Cook over medium-high heat until vegetables begin to soften (about 15 minutes). Add oil if needed.
1. Add the tofu, soy sauce, brown sugar, minced garlic, basil, oregano, crushed red peppers and tomatoes. Bring to a boil and simmer gently, stirring and scraping the bottom of the pan regularly, for 45 minutes.
1. Uncover and continue cooking 30 minutes or until it thickens. Add salt and pepper to taste.
1. Serve over the pasta of your choice.

IDidntAskForIt: My brain read bologna. I was waiting for a long time to see how that could turn into bolgna…..
tandoori_taco_cat: celeri
I2ed3ye: At first I was like ehhhh. But the money shot really sold me on it.
WorcestershireToast: Be careful when cooking red sauce in cast iron. You can’t simmer it too long or too hot before all you taste is metal.
warren54batman: When is the step where you throw it out?
chatatwork: This look like the kind of dish my friend’s mom would make.
It turned her off tofu for years.
Quelude: no bologna
edit: this is both the real deal and lacks bologna, why are you such a prude?
