Sweet potatoes
Skewers
Pastry brush
Clarified butter
1 Cup Brown Sugar
1 tbsp Cinnamon
1 tsp ground cloves
1 tsp Nutmeg
Preheat oven to 425°F
After cutting the ends of a long sweet potato, shove a skewer down the middle. Slightly cut the sweet potato in a downward spiral fashion without completely slicing through it. Delicately spread the potato across the skewer. Use pastry brush to spread clarified butter all over.
In a separate bowl, mix 1 cup of brown sugar, 1 tbsp of cinnamon, 1 tsp of ground cloves and 1 tsp nutmeg. Powder the mixture all over the sweet potato.
Place coated potatoes in the oven for 25-35 minutes. After baking, add additional brown sugar, mint to your liking and enjoy.
**My own notes:** If you’re not a fan of the peels, no worries, just peel it before you skewer it.
If you’re like me, you might not like too much sugar on your sweet potatoes—no worries. Cut down the brown sugar and try a different flavor profile—I really like to use a curry spice blend or a jerk spice blend, for example. You can also try adding some fresh orange zest. There are lots of directions you can go with this.
Make sure your knife is **properly sharpened**. You shouldn’t try to do this spiral potato business with a dull knife or you could hurt yourself.
