## The Kitten’s Arancini (Street Food style)
## Ingrédients :
* 250g cooked and cooled risotto
* 1 tbsp oregano
* 40g freshly grated Parmesan cheese
* The zest of a lemon
* 40g fine breadcrumbs
* 1 whole egg
* 1 bucket goat cheese, diced into 1 to 2 cm cubes
* Salt/ Pepper
## For the breadcrumbs :
* Breadcrumbs
* 2 whole eggs

## Steps (15min + 10min of cooking) :
* In a bowl, mix risotto, oregano, lemon zest, 40g bread crumbs, grated Parmesan cheese and egg.
* Season to taste.
* Using wet hands, form balls the size of a billiard ball.
* Make a hole with the thumb and add a dice of goat cheese. Close the riceball. Repeat for each riceball.
* Roll each riceball in the egg, then in the breadcrumbs.

* Fry each riceball for 5 to 7 minutes until golden brown, then place on absorbent paper.
* Let cool one minute and serve.

Zarathustra1969: What about the ragù?? There are two mainstream versions of this street food in Italy: the one with peas, cheese and ragù, and the one with just cheese and “prosciutto cotto”. There is AT LEAST one ingredient missing here. Was that done on purpose or what? I mean, I’m sure they taste good even like this, but if your goal was to make arancini the old fashioned way, you are missing those ingredients. And generally in Sicily they do not use goat cheese. I’m not even sure about the lemon zest, but I have no clue about that so it might be correct.
HoSang66er: Goat cheese? In an arancino? Pure Italian? Put away the goat cheese and do the following. Purchase some(1 lb) ground beef. Brown it off in a pan and add (1/2 cup) finely chopped onions. When the onions are translucent add some (2-3tbso) tomato paste and tomato sauce/puree(1 cup). Add enough water to cover meat by an inch or so and simmer for a half hour. Add a cup, or more if you like, of frozen peas at the end and let it cook another 5 minutes. It should be a tight meat sauce, not wet and runny. Season to taste with S&P. When you’re ready make your rice balls and use a tbsp or two of the filling along with a cube of mozzarella. The rest is the same. Fry and enjoy an authentic, deliciously authentic Italian snack. I’m Sicilian and this how it’s always been done in my home. I also make versions using mushroom risotto and butternut squash risotto.
