Large piece of Belly Pork (Ribs removed) Juice From 1 Lime, 1 Lemon, 1 Orange 2 tsp Salt 1 tsp ground pepper 1 tsp chilli powder 1 tsp smoked paprika 1 1/2 tsp garlic powder 1 tsp cumin 1 tbs balsamic vinegar
Mix all the ingredients together to make a marinade Put the belly pork into a plastic bag with the marinade Leave it in the fridge overnight Take belly pork from the fridge and leave for 1/2 hour Roll the belly pork up and tie it with cooking string Rotisserie on the Barbecue for around 2 hours or until the internal temperature reaches between 175 and 180 degrees Fahrenheit. Rest the belly pork. To make the crackling remove the skin before carving and finish off on the Barbecue grill.
