BushWeedCornTrash: May I make a suggestion… from a dirty water dog aficionado, use a pinch of cinnamon and cumin in the onions, just before adding the paste, water it down with a little beer or water if needed. And NYC dogs are steamed or boiled because open flame laws in the city. I would prefer charcoal every time of course. And given the ethnic make up of who is selling me hotdogs, (and the people walking around me) I don’t think bacon would be something you come across at many carts.

We eat them with sauerkraut. Just like we when we go see the Mets play (not the Yankees, because fuck the Yankees). And we don’t BBQ them. Hot dog carts don’t have grills and BBQ. Just boiled. From the cart. Stuck in a bun. With kraut and mustard. Then eat it.
WiredEgo: For those who want some next level shit: before grilling split the hotdogs length wise cutting half way through the dog. Next cut a pickle spear long ways in half.
When hot dog is cooked place in but with the slit facing up. Wedge your pickle spear in there .
