evileine: When many Irish folk were pushed off their land, they ended up in NYC close to the Jewish slums. Corned beef was one of the only preserved meats that they could afford. Nobody eats this dish in Ireland normally. If you want to celebrate immigrant cultures’ cuisines in the US, then go for the corned beef. But it’s as authentic to Irish culture as pierogis and bagels.

**Ingredients**
3 lbs. russet potatoes, peeled an quartered
8 oz. corned beef, finely shredded or cut into a very small dice
1½ cups shredded cheddar cheese
2 teaspoons garlic powder
1 teaspoon paprika
2 teaspoons salt
2 tablespoons flour
canola oil for frying
For the Sauce
¼ cup ketchup
½ cup mayonnaisse
1 tablespoon worcestershire sauce
**Directions**
Place the peeled potatoes in a large pot with water. Boil until tender then drain.
Rice the potatoes with a potato ricer or mash until smooth.
Add the potatoes to a large mixing bowl along with the corned beef, cheese, garlic powder, paprika salt and flour and stir well to combine.
Add the canola oil to a deep pot, filling only halfway and heat over medium heat until 375 degrees.
While the oil is heating, form the potato mixture into “tots” about 2-3 inches big. You should have about 30 tater tots when you’re done.
Once the oil reaches 350 degrees, add in the tater tots a few at a time (depending on the size of your pot, just don’t crowd them too much)
Fry for about 3-4 minutes until they get golden brown and crispy.
Drain on paper towels and season right away with coarse salt.
**To make the remoulade sauce- I used ranch. I put that recipe below also**
Add all the ingredients to a small bowl and stir to combine.
Makes 30 Tots.
HairoftheDog89: Corned beef isn’t really a thing in Ireland, but we do like a bit of boiled back bacon and cabbage with some mashed potato, that would be way more traditional than this.

**Ranch Dressing dipping sauce. I preferred this when making the tots over the one in video**
**INGREDIENTS**
1 cup mayonnaise
½ cup sour cream
½ tsp dried chives
½ tsp dried parsley
½ tsp dried dill weed
¼ tsp garlic powder
¼ tsp onion salt
a few sprinkles of pepper
**INSTRUCTIONS**
Put all your ingredients in a medium sized bowl. Stir everything together till smooth.
Place in refridgerator for 30 minutes (or longer) to chill before serving.
