P_U_K_E_K_O: Arghh, sorry for the delay. It wasn’t showing as having actually posted so I couldn’t click on anything to add the recipe!
INGREDIENTS.
70gm softened butter.
100gms white sugar.
Zest of 2 lemons.
1 egg.
Yellow food colouring (optional)
2 Tablespoons lemon juice.
150gms plain flour.
1 tsp baking powder.
Powdered/Icing sugar to coat.
METHOD.
Using a spatula cream the butter, sugar and zest in a mixing bowl until combined and creamy.
Add egg, and food colouring if using. Mix.
Add lemon juice and mix. Don’t worry if it curdles.
Sift in flour and baking powder, mix until combined fully.
Put in fridge for 30 minutes.
Using floured hands, roll into balls and place on baking paper lined tray (recipe should make 10-12 balls) squish slightly.
Put in freezer for 30 minutes.
Oven at 180c, bake leaving enough room to spread up to about palm sized, bake for exactly 13 minutes.
Once cooled, shake in a bag with icing sugar until coated. Enjoy!
