This homemade hummus will be a perfect duet for fresh or baked vegetables, grilled meat, fish or poultry. And it’s a best companion for traditional falafel.

**Ingredients:**
For Hummus (for 14 portions):
– 9 ounces dried chickpeas
– 4 ounces tahini (sesame paste)
– 2-3 cloves garlic
– 2-4 tablespoons extra virgin olive oil
– ½-1 lemon, squeeze the juice
– ½ teaspoon cumin seeds
– 1 teaspoon salt
**Instructions:**
1. Rinse chickpeas in cold water and put in a large bowl. Pour water and soak for 24 hours.
2. Rinse chickpeas carefully after soaking and put in a big pan. Pour with water to cover chickpeas by 2-3 inches and cook on a low heat about 2-4 hours. After drain and pour with cold water.
3. Drain chickpeas and put in a large bowl. With food processor puree your chickpeas until smooth. Add other ingredients and process again to combine them well.

jelsomino: According to [How It’s Made](https://www.youtube.com/watch?v=VZ85ktXKhm4) 14 hours of soaking is enough for mass production. So if you’re in a hurry soaking chickpeas overnight will suffice. Also always use cold water
