1) Cauliflower – 500g
2) Peanuts – 15 pcs.
3) Curry leaves – 10, 12
4) Green Chili – 2,3
5) Chopped Onion – 1/2
6) Mustard Seeds – 1 table spoon
7) Olive Oil – 2 tsp.
8) Turmeric powder – 1/2 table spoon
9) Salt to taste
10) Coriander leaves – 20 grams
11) Lemon Juice – 1/2 tsp. Optional
▬▬▬▬▬▬▬▬▬▬▬▬Method▬▬▬▬▬▬▬▬▬▬▬▬
1) Firstly separate caluiflower into stalks and florets.
2) Wash thoroughly.
3) Cut the stalk into cubes – as cauliflower stalks are better alternative for potatoes
4) Grate florets with the help of grator or food processor.
5) Roast the peanuts in a frying pan with one table spoon of olive oil till they get a nice golden brown colour and set aside in a bowl.
6) In the same pan add mustard seeds and stalk cubes and roast the same for about a minute.
7) Now add onion, green chili and curry leaves and saute well for around a minute.
8) Then add turmeric powder, salt and roasted peanuts. Mix well.
9) Add in the grated cauliflower, mix well and cover and cook till tender.
10) Now add around 1/2 tables spoon of lemon juice and chopped coriander leaves.
11) Serve and stay healthy!
