Add cajun seasoning to a chicken breast and flatten.
Add 1/4 cup parmesan to (1 cup?) bread crumbs in a bowl next to a bowl of 1 cup flour and a bowl of 2 beaten eggs. Assembly line apply flour, then egg, then parmesan+bread crumb mixture.
Heat up 2 tbsp butter and 2 tbsp oil in a cast iron pan. Fry up the chicken. Keep warm.
Put 2 tbsp oil and 3 tbsp butter into a nonstick pan and heat up. Add 1 1/2 cup of minced diced peppers (red, orange, green, and maybe yellow are shown). Add 1 cup mushrooms. Add 1 cup red onion. Add 1 tsp salt. Towards the end, add 3 garlic cloves and 2 tbsp cajun seasoning. Add 1 cup chicken stock. Add 1 cup heavy cream. Add 3 cups of cooked farfalle. Add 1/2 cup parmesan. Add 2 tbsp basil.
Plate with the chicken cut up.
