Chicken Malai Curry recipe is a mouth watering chicken recipe that is indigenous to India. The rich flavor of coconut, spices paired with chicken brings to life this amazing dish.
You can choose to use store bought coconut milk if you so wish.

# Preparing the coconut milk
**Ingredients**
* 1 medium sized coconut
**Instructions:**
* Grate the coconut with a hand grater.
* Put some water and half of the grated coconut in a blender.
* Blend for 30 secs.Strain the milk using a strainer and pressing the coconut with a spoon. Repeat with the remaining grated coconut.
** or you can use store bought coconut milk but using the fresh milk is highly recommended
# Prepare the puree for gravy :
**Ingredients**
* 1 medium sized tomato
* 2 small onions
* Garlic – 8 large cloves
* Ginger – 30 gms
**Instructions**:
Boil the onions, tomatoes, ginger and garlic. Add some water and blend them into a puree
# The Curry:
**Ingredients:**
*Chicken breast – 500gms
* 2 small potatoes cubed
* Whole spices –
* Bay leaves : 2
* Whole Cardamom : 8-10
* Cinnamon : 1 stick
* Cloves : 5-6
* Turmeric Powder 1 tbsp
* Red chilli powder : 1/2 tbsp
* Salt as per taste
* Sugar : 1 tsp
* Homemade Garam Masala : 1 tsp (Equal part of cinammon, cardamom and cloves)
**Instructions**:
* Heat oil in a cooking pot.
* Add the potatoes and some salt .Cover and cook for few mins tossing in between until all sides turn golden brown. Remove and set aside once done
* Add the whole spices and fry for 30 secs
* Add the chicken pieces and toss for a couple of minutes.
* Cover and cook on medium to low flame for 5 minutes
* Now add the puree, Salt as per taste, sugar, turmeric, red chilli powder
* Stir and mix the spices evenly. Cover and cook stirring in between
* Add 1 tbsp Ghee (Clarified butter) and the potatoes. Cook for a few minutes
* Once the chicken is cooked, add the coconut milk. Cover and bring to a boil.
* Reduce the gravy to your desired preference
* Mix 2 tsp Garam Masala powder.
* Cover, turn off heat and let it rest for a few mins
* Serve hot with Roti or Rice
